New week

 Hi!

So not really much to update on.

This week not much happened. They had me work a lot more than usual so I was pretty busy. I almost bought a cat and a snake as an impulse buy haha but I am glad I didn't.

As far as my health journey: I found out the gym below us isn't accepting new members currently so I am just going to do my best at home. I finally found a way to cook tofu that I actually like! I am also working on perfecting a vegan meat substitute called seitan, its originally from china, its flour and water kneaded and then you rinse all the starch out so once it is cooked it has a meat like texture and all that's left from the rinse is gluten and proteins, so far I haven't been able to get the texture right though so I am still working on it. Taylor asked for some of my healthy food ideas so these are a few: I usually keep a frozen bag of fruit in the freezer for smoothies, snacks or dessert. My smoothies I usually put a frozen banana, fruit, yogurt or almond milk, vanilla extract/protein powder if you have any and spinach. I usually eat them plain as a snack or with honey. For dessert I have a couple options: Frozen blueberries, peanut butter, granola, honey and chocolate chips or nice cream: frozen bananas, cocoa powder, peanut butter and vanilla extract blended in a food processor. I try to eat a lot of nuts and veggies if I'm hungry in-between meals. For breakfasts I usually do oatmeal, eggs scrambled with spinach or a smoothie. Lunch I have salads (my absolute favorite salad: greens with any veggies, though I wouldn't do peppers with this one, raspberry vinaigrette, avocado, grapefruit and salt and pepper) For dinner I usually focus on a week since I am on a pretty tight budget but I get a lot of my recipes from a vegan YouTube channel called pick up limes. Recipes other than that, I cook fish with garlic and add spinach, mushrooms, any spices you like and at the very end halved cherry tomatoes.

For my mental health: This week has been a rough one I've had a ton of panic attacks, but I have started been able to recognize my triggers and have successful stopped a few so I am glad to make some progress.

I've been working on figuring out what kind of outfits I like since it was kinda all over the place, so that's been especially fun.

I have today off, so I am going to go thrift shopping, crystal shopping and go on a hike and a picnic. Later today I have my first therapist appointment so hopefully it goes well.

  2. I love looking at pick up limes, those recipes look sooo delicious! I have yet to try them, I'm on a america's test kitchen kick and have been making everything from my cookbooks I got. I have been curious about tofu so what is this new way of cooking it that you like? Sounds like you had a better week so good job, keep going.
